Opening their cafe four years ago, “my business partner and I wanted to stop working for others and start devoting our time and energy to a project that aligns with the values we hold dear,” the co-owner said. Will Fisher.
These values are “food, fitness and community”.
This is also related to their choice of location. “Braddon is considered a lifestyle, food and entertainment district in Canberra.
“Our coffee product benefits from the positioning and alignments with our target demographics that Braddon provides; [its] close to gyms and fitness centers, close to offices and workplaces as well. Plus, the foot traffic provides awesome visibility for the cafe,” Will said.
“There are so many excellent operators and diverse businesses in Braddon, and we are very pleased to contribute to the range and variety of products that make Braddon an exciting dining and entertainment destination.
“We have friends everywhere, Evan from LSR, Ricky from Alcove, Stu from Volsted, Becky from Zaab, Talia from Rizla, Troy from Knightsbridge, Jared and Ben from Lazy Su, to name a few in Braddon And it’s not about competing against each other, it’s more about complementing each other and raising the bar together.”
Additionally, “being in Braddon, we love the opportunity to connect with our locals and be a part of their daily lives.
“We have so many guests that we see every day, sometimes twice a day. We love the culture of the community and the energetic center that is Braddon. Sometimes when I stop for breakfast or lunch, I see friends of mine from all different circles all gathered together. Some close friends, some I play sports with, some I work with, old friends, [and] friends of friends I’ve met along the way.”
The company has a team of “around 20 people across the site, from cafe manager Marcelo Molina, baristas, FOH rockstars to executive chef Josh Smith-Thirkell – aka chef of the year – [along with a] the chef, the kitchen staff and everything else.”
Above all, “we are a health food focused cafe offering dine-in and take-out, locally roasted coffee by Lonsdale St Roasters, homemade kombucha and juices prepared by our team, and of course our food philosophy is part from our Gather office and event catering.
“We are also close to completing the expansion of our site to include a wine bar and restaurant which will open in mid-September, bringing more energy and variety to Braddon, staying true to our approach regional ingredients and our fun and engaging style of cooking.. This time for evenings parallel to our morning chats,” Will announced.
In terms of customer behavior, “a lot has changed for us as operators over the past few years,” Will said.
“Excluding the impacts of COVID on society, we have seen a shift in customer needs and expectations, moving towards a more thoughtful and conscious approach to food and service.
“We’ve noticed more emphasis than ever on aligning ‘my daily activities and habits with those of my values and my choice.’ Now more than ever, people are making choices that add value to their quality and their enjoyment of life. and time.
“Connecting to their ingredients, servers and local businesses, including dining option choices, provides an opportunity to engage and support their community. ‘a significant change in the way our regulars and Canberrans move.”
